Sausage Casing Size Chart - I believe the quality of the casings is part. One person holding the casing on tube and also helping fill the hopper with meat. 21mm are hot dog casing size. Again, this will be my first attempt. Easy to use and makes a great sausage. Don't let the phrase peel off casings worry you.

Thought i would post up what i do with natural casings. I just made a sausage stuffer that has a fixed 3/8 nozzle on it. All that being said, i have no idea how these guys come up with their numbers.

Remember, the stick will shrink in size as it is smoked/heated or dehydrated. I was just curious if i should go larger..
The 21mm is the easiest to work with imo. What size casings do you all prefer for snack sticks? I was thinking i would like to do 16mm casings. The sausage comes right out. These are all the same 25mm casings , breakfast sausage.

From what i have read you are supposed to slide the casings over the tube then tie the end off and start filling but most of the snack stick kits i have found come with 19mm casings and the charts i have found that correlate tube size to casing size say i need to be around a 28mm casing for that tube (midwestern research).

Just Enough Pressure To Fill The Casing.
21mm are hot dog casing size. I use the ones for fresh sausage in the smoker with no problems. Per 1 inch weight of pork in a 64mm casing 1.75 oz./inch x 12 inches = 21 ounces per 12 of casing. I dont know about anyone else but i have had the same problems with collagen casing that say they are for smoking.
